Our brandy is distilled from wine — not from pomace. That is the line that separates brandy from chacha in the Georgian cellar: chacha takes what the wine has left behind; brandy takes the wine itself, and slows it down in oak. Aged quietly. Poured after dinner, when conversation has softened. The fuller tasting notes wait to be written in Nugzar's own words — the hand that tends the still.
Origin
Georgian brandy follows the same logic as cognac and Armagnac: wine first, then distillation, then years in oak. It is not a protected designation like chacha — it is older than the paperwork, and it is made the way the family has always made it.
Food pairing
Late in the evening. Dark chocolate. Walnuts. Dried persimmon. The last hour of a long table.
