Tasting note

A dry red from Saperavi. The name means the place of colour: a vine whose flesh and skin are both red. Ink-dark in the glass, black cherry and blackberry on the nose, with licorice, clove, and a firm tannin shaped by six months on skins in qvevri. Built to sit and wait. No chemical additives. Small sediment is natural.

Origin

Our Saperavi grows at 850 metres in Nigazeuli, in the Adjaran mountains — the same land where the Khimshiashvili beys once held their valley. Cold nights and stony soil give this grape a structure you do not find in warmer sites.

Food pairing

Mtsvadi — pork skewers over vine-wood embers. Chakapuli with tarragon and young lamb. Walnut-dark stews of winter.
