Tasting note
Rkatsiteli is one of the oldest grape varieties in the world and the most planted vine in Georgia. Our small block is vinified the Georgian way: whole clusters fermented on skins in qvevri. Crisp green apple, quince, white flower, finishing on a mineral note that tastes like cellar stone. No chemical additives. Natural sediment may appear.
Origin
A grape whose seeds have been found in archaeological sites dated to the Bronze Age. We make very little of it. A single qvevri a year.
Food pairing
Satsivi with walnut. Fresh sulguni. Ajapsandali. A late afternoon on the porch with friends.
Made and bottled in the Khimshiashvili family cellar.
