Tasting note
A lighter Georgian red. Bright cherry, raspberry, crushed mountain herbs, a thin line of pepper on the finish. Three months on skins in qvevri. Drinks cool, opens slowly, pairs with nearly anything green. No chemical additives.
Origin
Tavkveri is an eastern-Georgian grape we chose to bring west, to the mountain block in Nigazeuli. A small experiment that has held every vintage since we planted it.
Food pairing
Chakapuli — young lamb stewed with tarragon and sour plum. Chicken mtsvadi. Grilled trout. Warm khachapuri from the stone.
Made and bottled in the Khimshiashvili family cellar.
